Can demons be described with animal's descriptions?

Animals are not demons. But it is possible for demons to be described with descriptions of animals

Descriptions of animals can be applied to all kinds of beings. The goal to apply animals' descriptions specifically to some demons' descriptions can be to highlight similar characteristics that both share.

Animals are not demons:

Animals are not demons.

To highlight how animals and demons can be distinct, there is for example an account of a "MAN" (Luke 8:29) describing that "many DEMONS ENTERED INTO HIM" (Luke 8:30) but later, "THE DEMONS, HAVING-COME-OUT from THE MAN, ENTERED INTO THE PIGS" (Luke 8:33). 

Here the demons themselves were not THE ANIMALS (in this example, "THE PIGS") as the demons needed to ENTER INTO THE PIGS the same way they ENTERED INTO THE MAN first. But as that passage also reads, they can end up COMING OUT of the being that they entered, further displaying that they are not themselves that being.

Demons can be likened to animals:

Serpents:

Jesus used the term for "SERPENTS" to describe demons, as it is written: "the seventy returned with joy, saying, “Lord, even THE DEMONS are-subject (to) us in Your name”." (Luke 10:17), and Jesus told them: "Behold, I-have-given you the authority to-trample on SERPENTS" (Luke 10:19).

The term for "SERPENT" is used to describe the devil and Satan, as it is written: "the ancient SERPENT, the (one) being-called (the) DEVIL and SATAN" (1 Peter 5:8).

Scorpions:

Jesus used the term for "SCORPIONS" to describe demons, as it is written: "the seventy returned with joy, saying, “Lord, even THE DEMONS are-subject (to) us in Your name”." (Luke 10:17), and Jesus told them: "Behold, I-have-given you the authority to-trample on serpents and SCORPIONS" (Luke 10:19).

Lion:

The term for "LION" is used to describe the devil, as it is written: "Your adversary THE DEVIL is-walking-around like (a) roaring LION" (1 Peter 5:8).

Birds:

Jesus used the term for "BIRDS" to describe the ones of the evil one, as it is written: "some (seeds) fell along the road. And having-come, THE BIRDS ate them up" (Matthew 13:4), and then Jesus explained that this means that "THE EVIL (ONE) comes and snatches-away the (thing) having-been-sown in his heart. This (person) is the (one) having-been-sown (the seed) along the road" (Matthew 13:19).

Goats:

The term for "GOATS" is used to describe demons, as it is written: "they will no longer offer their sacrifices to GOATS" (Leviticus 17:7, Masoretic). As Paul wrote: "(the things) which they-are-sacrificing, they-are-sacrificing (to) DEMONS" (1 Corinthians 10:20).


Animals' descriptions can be used for all kinds of beings:

Animals can describe all kinds of beings.

For example, the devil can be described as a lion, as it is written: "THE DEVIL is-walking-around like (a) roaring LION [leо́n 3023 in Greek]" (1 Peter 5:8). JESUS can also be described as "the LION [leо́n 3023 in Greek] from the tribe (of) Judah" (Revelation 5:5). 

Another example: "SERPENTS" can describe demons, as it is written: "the seventy returned with joy, saying, “Lord, even THE DEMONS are-subject (to) us in Your name”." (Luke 10:17), and Jesus told them: "Behold, I-have-given you the authority to-trample on SERPENTS [ophis 3789 in Greek]" (Luke 10:19). "SERPENTS" can also be used to describe DISCIPLES OF JESUS, as Jesus said to His own disciples to "be wise as the SERPENTS [ophis 3789 in Greek]" (Matthew 10:16).


Animals' descriptions are used to highlight characteristics:

The goal of using animals' names and applying them to beings can be to highlight characteristics of that animal which the being described can also have. 

For example, it is written: "Your adversary the devil IS-WALKING-AROUND like (a) ROARING LIONSEEKING SOMEONE TO-DEVOUR" (1 Peter 5:8). Here characteristics of the LION are highlighting characteristics of the devil: "WALKING-AROUND", "ROARING", "SEEKING SOMEONE TO-DEVOUR". 

Another example: Jesus said: "some (seeds) fell along the road. And having-come, THE BIRDS ate them up" (Matthew 13:4), and then Jesus explained that this means that "the evil (one) COMES AND SNATCHES-AWAY THE (THING) HAVING-BEEN-SOWN IN HIS HEART. This (person) is the (one) having-been-sown (the seed) along the road" (Matthew 13:19). Here THE BIRDS are highlighting characteristics of the evil one who "COMES AND SNATCHES-AWAY THE (THING) HAVING-BEEN-SOWN" (Matthew 13:19). 

Jesus said to His own disciples to "be WISE as the SERPENTS" (Matthew 10:16). Here THE SERPENTS are highlighted and applied to the disciples who are to be "WISE".
